1. Choose fresh eggs free from cracks.

4. To one cup of hot water, add 2 tablespoons of white vinegar, and the desired food coloring or dye. Be sure to get enough food coloring in the water to make it a darker shade than the desired shade for the eggs. (Our twelve color gel set works well.)

5. Dip the eggs in the colored solution until the desired shade is reached. For darker shades, leave the eggs sit in the dye for up to two hours.

6. If the eggs are to be eaten, keep them refrigerated.

Baker's note: If you are going to use blown eggs for Easter (those with the egg blown out through a hole in the end of the shell), color the eggs before blowing. If you blow the egg from the shell before dying, the empty, fragile shells will be difficult to immerse and handle in the dying water.

Buying eggs

Checking for freshness

All eggs have to have a "use by date" on the box so no need for any of the of the old wives tale methods of days gone by. But the best way to practically tell if an egg is fresh is to break it on a flat plate. If the yolk is firm and the white stays firmly around it then it is fresh.

Salmonella

Always buy eggs with the lion stamp. The birds that have laid these eggs have been vaccinated against Salmonella. If you are using your eggs in cakes or any method where the egg is cooked through then there should be no danger of salmonella. This is usually only a problem when using raw or semi-cooked eggs when making mayonnaise or lightly boiling an egg when the yolk is still runny.

Storing Eggs

Eggs should ideally be kept at a temperature around 15 degrees Centigrade. But most people keep them in the fridge. However you should always remember to take them out at least 15 minutes before cooking them, especially for frying or boiling.

Separating an Egg

Have 2 bowls side by side. Crack the egg and using each half of the shell pass the yolk from one half to the other while letting the white of the egg drip into one of the bowls. The yolk then goes in the other bowl.

Whisked egg whites.

Usually used for meringues and souffls. This is the method of whisking just the egg white until it forms firm peaks. It is important not to over whisk the egg white as it will turn runny again. An electric whisk is the easiest way of achieving this.

Boiled Egg

Always take eggs out of fridge at least 15 minutes prior to cooking. Pour enough water into a saucepan to cover the eggs. Bring the water to the boil. Using a spoon put the eggs gently into the boiling water. Then turn the water down to a simmer. Cook 5 minutes for a soft boiled egg and 8 - 10 minutes for a hard boiled egg.

Fried Egg

Lightly cover the base of a frying pan with cooking oil. Heat the oil until very hot, Break the egg carefully into the oil. If you want to keep the yolk intact then you could break the egg into a cup first and pour gently from the cup into the oil.

The fat should be sizzling hot. Spoon oil over the top of the egg to allow it to set.

Use a spatula to remove from the pan.

Scrambled Egg.

Break 2 eggs into a bowl and whisk. Melt a small knob of butter in a saucepan then pour in the whisked egg. Continuously stir until light and fluffy.

Poached Egg

Fill a pan with about 1 inch of cold water and bring to the boil. Reduce the heat but keep water bubbling lightly. Pour the egg into a cup. Stir the water with one hand and immediately pour the egg in with the other. This takes about 3 minutes to cook. Lift from the water using a draining spoon.

An Egg is For Life; Not Only for Easter - Food

At this specific time of year everybody is almost certainly thinking about eggs - the chocolate, Easter egg kind that are customarily sold in bulky cardboard containers and plastic packaging or sometimes wrapped in brightly coloured foil. I've had eggs on my mind most of this year for a very different reason.My 7 year old sons' schoolteacher (who will remain annonymous) evidently spent the whole of his Christmas holidays constructing his own chicken coop in his yard and when back to school in January he decided to share his chicken raising interest with every impressionable boy in group 2a. He doesn't have his own children.

So we've had the chicken coop, a pre-constructed one, I might add, for 5 weeks at this point and we have a mixed-breed family unit of 5 laying hens. If you are using a sauce pan, bring the water to a boil and then cook the eggs according to the following size and time amounts:

Small Eggs - 12 minutesMedium Eggs - 13 minutesLarge Eggs - 14 minutesJumbo Eggs - 15 minutes

If you are using a steamer, fill the steamer with an adequate amount of water, load the steamer with eggs, and set the timer to 15 minutes. Larger eggs will require more time in the steamer. If all of your eggs are jumbo size, then you might want to cook them for 17 or 18 minutes.

How to Properly Boil an Egg - Family

STEPS IN BOILING AN EGG

You have to use a big pot for this process especially if you are cooking more than one egg. The pot should also be considerably deep so that the water will not spill over when it boils. Check if the eggs will fit perfectly in the container and it should have a two inches space above.

You can choose to cover or not to cover the pot while you are boiling it. Place the eggs one by one in the pot and add cold H20. Remember to keep a space between the eggs and avoid stacking it since it will just compromise the quality of the product. It should also have one inch of H20 above it. Place the pot on the gas range and turn up the heat.

When you see big bubbles in the boiling H20, turn down slightly the heat. Uncover the pot in exactly ten minutes. You are not required to mix it at all. Do not leave the eggs on the hot water since it will be in danger of being overcooked.

After removing it from the pot, pour cold water over it. Repeat the process until the eggs cool down. The cold H20 will stop it from being overcooked with its own heat. Wait until it cools down before carefully removing the shell of the egg.

Fresher eggs are harder to peel off compared with older ones so choose the latter one if you want the best type of egg for boiling. How to Make perfect Hard Boiled Eggs

With Easter approaching, many people make hard boiled eggs to decorate for their baskets. Actually a better name for the eggs is hard cooked eggs because boiling them hard will not produce good eggs to use for eating or decorating.
Instructions to make hard cooked eggs:
1. Place clean fresh eggs in a pan. (It's best to have eggs fill the bottom of the pan in a single layer, so if you are only boiling a few eggs, use a small pan.)
Tip: Eggs nearing their eat by date are best to use, not only for longevity, but they are easier to peel at the end of this process.
2. Add COLD water to the pan until it completely covers the eggs, plus about 2 inches over the top of the eggs. You can add food coloring to the water if you would like pastel colored eggs. This also make the eggs easy to differentiate from the fresh eggs in the fridge.
3. Place the pan on medium-high heat until the water bubbles everywhere on the surface.
4. Reduce the heat to medium-low or low and continue to boil gently for 10 minutes.  Be sure to set the timer so as not to cook the eggs for too long.                                                   Do not keep the eggs on a full boil or you will have very tough whites.                                     Do not cook the eggs for longer than 10 minutes or you will have a greenish ring around the yolk.
5. Rinse the eggs with PLENTY of COLD water while being careful to keep the eggs in the pan.
6. Place the eggs in the refrigerator to cool. You can keep the eggs in same pan, but be sure all the water has been removed from the pan before placing it in the fridge.
7. When cooled, peel the shells from the hard boiled eggs. To make peeling easier, gently roll the hard boiled eggs between your palm and the counter to loosen the shell first. Rinse the peeled hard boiled eggs under cold water if any shell particles remain on the egg.
